Time to eat
There is a common misconception that animal products are necessary to cook Chinese food. Not true! I have been researching diverse Chinese regional cuisines for years, and found much joy and nourishment in cooking 100% plant based dishes using traditional Chinese ingredients. In fact, there is a wealth of plant based dishes in the numerous cuisines across China and her diaspora communities.
In this two hour workshop you will learn how to use the principles of Chinese cooking to work with some lesser known Chinese ingredients. We will take a tactile, playful, inquisitive and creative approach. You will be encouraged to touch, examine, smell, taste and listen to the food in front of you and imagine how it may serve you best.
I will be sharing practical and technical advice about ingredient buying and preparation, as well as titbits that weave in history, traditional Chinese medicine and philosophy. There will be opportunities to ask questions and browse my reference library. Towards the end we will make one dish together, and then your hard work will be rewarded with a light meal of congee with pickles, ferments and side dishes that I have prepared.
You will come away from this workshop stimulated and nourished, and inspired to start building your plant based Chinese pantry to cook from right away!
