Recipe: Five Minute Healthy Steamed Tofu

A continuation of my store cupboard experiments, in which I attempt to make a quick, healthy, vegan meal in under 30 minutes. In this case, it took me closer to 15 minutes.

The star of this meal was a soft tofu, microwave steamed with a dollop of my bold homemade black bean chilli oil. I always have a few pre-packed tofus in the fridge or store cupboard, as they keep for a long time and are perfect when you need a healthy injection of protein. For silken tofu I recommend something like the Mori-nu Firm Silken Tofu or Clearspring organic tofu, both of which don’t need refrigeration. You can eat this with whatever you like, or even by itself; on this particular day I had some leftover truffle pasta and a slightly al dente avocado to complete the set.

Ingredients

  • 200g soft or silken tofu

  • For the black bean chilli oil: 1 tsp fermented black soybeans, 2 tsp olive or sesame oil, 1 pinch of chilli flakes

  • Light soy sauce

  • To garnish: finely sliced spring onions — green part only

Instructions

  • Prepare the chilli oil by mixing all the ingredients in a bowl, slightly crushing the soybeans if you can. I highly recommend you make a bigger batch of this to keep in the fridge; it’s great for dipping and stir frying.

  • Place the tofu in a microwaveable bowl and dollop the chilli oil on top of the tofu. Cover with clingfilm and microwave on full power for 2-3 minutes.

  • Garnish with spring onions and finish with a small slug of soy sauce. Enjoy.
