Where are you from? Where are you really from?

I live in East London, was born in South Wales. My dad's from Sai Kung, Hong Kong, and my mum's from Shenzhen, Guangdong.

Rice or noodles?

I can't choose! This is a very unfair question and it’s like choosing your favourite parent. If I really HAD TO pick one it'd probably be noodles because of instant ramen (Nissin Demae til I die). Or, go one better by doing the sacrilegious thing of combining the two together like Feroz recommends in his Vittles piece. Carb on carb action!

What does home taste like?

My mam's bitter Chinese herbal soups (sai yueng choi tong is a personal fav), silky tofu pudding with ginger syrup, pickled cabbage with shredded pork vermicelli soup noodles, wah mui (dried plums), black sesame tong yuan, homemade fish balls, wontons, fried dace salted black bean, boiled salted egg, steamed egg, Sha Tin-style chicken congee with youtiao.

Share a food memory:

Growing up, when we used to head out for our weekly Sunday dim sum ritual before Chinese school, I used to hate prawns but loved the bouncy, translucent har gow skin. I used to squeeze out the prawn filling and slipped them into my brothers' bowl while I ate just the skin. I was such a weird backwards kid.

Who's your Chinese food legend?

Other than my other mother dearest (obviously), Cecilia Chiang, Yan-Kit So, Eileen Yin-Fei Lo, May Chow, Lucas Sin, Jenny Gao and Lisa Lin.

Idea for a Chinese fusion dish:

Scampi fries crisp dust with dried oyster and dried scallop congee, lap cheung scotch sausage roll, lap cheung scotch egg, crispy siu yuk sandwich, mapo tofu nachos, stewed brisket with daikon pie, ma lai gao trifle.

What’s a Chinese recipe everyone should learn?

Whole steamed sea bass with ginger and spring onion. It’s such a comforting, healthy and straightforward dish that can easily feed many mouths for cheap. We used to eat it almost everyday for family meal before service at the takeaway.

Dream dinner party guests:

'Fei Fei' Lydia Shum, Carol 'Do Do' Cheng, Wong Kar Wai, Stephen Chow, Chow Yun-fat, Eric Tsang, Anita Mui, Faye Wong, Chibi Maruko-chan, Doraemon (he can bring endless gadgets for show and tell and supply dorayaki for dessert).

What does Chinese food mean to you?

A half and half chicken curry with rice and chips (lol, kidding) Chinese food isn't just takeaway food that most Brits know and love. Chinese food is diverse, full of history, made with love and most importantly really, really fucking delicious.
